Hard Shell Burrito

Easy Air fried Burrito made from scratch.

Equipment

  • Air Fryer Not needed if you are making your burritos soft shell

Ingredients

  • 1 lb lean ground chicken I used 98% lean
  • 1/2 Cup Jasmine Rice Uncooked
  • 1 cup Cherry Tomatoes
  • 1 small diced onion
  • 1 can Del Monte Vegetable and bean blends
  • 2 tsps Minced garlic
  • 1 cup Diced colored peppers
  • 1 tsp salt and pepper
  • 1 tbsp Smoked Paprika OR an taco seasoning (optional)

Instructions

  • Spray the bottom of a pot with olive Oil. Saute all veggies and ground chicken together along with garlic and spices. Once almost cooked through, add the tomatoes and canned veggies combo. Let simmer about 30 minutes on low. Add rice and cook on low for 5 minutes, then turn off and let rest for 30 minutes.
    Place 2-3 tbsps of mixture on one half of a low point tortilla. Fold over and spray with a little olive oil spray and shake over some taco or pinto bean seasining. Air fry for about 5 minutes at 400 for a crispy shell.

This makes 12 BurritosĀ 
With a Low WW Point tortilla and a sprinkle of cheese, this will be 3-4 points
