Air Fryer Not needed if you are making your burritos soft shell
Ingredients
1lblean ground chickenI used 98% lean
1/2CupJasmine RiceUncooked
1cupCherry Tomatoes
1smalldiced onion
1canDel Monte Vegetable and bean blends
2tspsMinced garlic
1cupDiced colored peppers
1tspsalt and pepper
1tbspSmoked PaprikaOR an taco seasoning (optional)
Instructions
Spray the bottom of a pot with olive Oil. Saute all veggies and ground chicken together along with garlic and spices. Once almost cooked through, add the tomatoes and canned veggies combo. Let simmer about 30 minutes on low. Add rice and cook on low for 5 minutes, then turn off and let rest for 30 minutes. Place 2-3 tbsps of mixture on one half of a low point tortilla. Fold over and spray with a little olive oil spray and shake over some taco or pinto bean seasining. Air fry for about 5 minutes at 400 for a crispy shell.
