When you are on a WW lifestyle journey, or many other diets lifestyles, boneless skinless chicken breast is key.  Its high in protein, low in fat and very versatile!  Boneless skinless chicken breast does NOT have to be blah and boring.  No way! 

This Aloha chicken is bursting with flavor.  Its sweet and savory at the same time and is anything but boring.  In fact, it is one of my families’ very favorite dishes!

If you cant find the sugar free ketchup that is recommended in this WW recipe, I would suggest using a sugar free BBQ sauce.  Also, be sure these is no additional sugar added in the pineapple rings because we are going to use a couple tablespoons in the marinade. The acid in the pineapple juice will tenderize the sometimes tough chicken breast.  This addition solves that problem plus it gives the dish that wonderful natural sweet pineapple flavor!     

I eat this dish plain with a side salad or some fresh green beans and garlic.  My husband and the rest of my family crave it with Jasmine rice. 

Serve this one up however you like! 

Aloha Chicken

This pineapple and brown sugar chicken is a family favorite!

Ingredients

  • 2 Boneless Skinless Chicken Breasts
  • 1 can No sugar added Pineapple rings
  • 2 tbsp G Hughes Sugar free ketchup
  • 1 tbsp brown sugar substitute
  • 1 tbsp Low sodium Soy Sauce
  • 1 tbsp garlic powder
  • 1/2 tsp pepper
  • 2-3 tbsp pineapple juice from the can

Instructions

  • Cut 2 pieces of chicken into chunks and drop them into a freezer bag. In a small bowl combine all ingredients except the pineapple. Pour into freezer bag with chicken and coat chicken. Marinade for 24 hrs in refrigerator.
    Preheat oven to 400.
    In a small casserole dish -- mine was 8 X 8 -- place pineapple rings on the bottom. Pour chicken and all marinade over the pineapple and cover with foil. Bake for 35 minutes.
    Serve as is or better yet with a little Jasmine Rice.
