Cheesy Veggie Casserole

Meatless Monday is a wonderful idea but is it satisfying? Can you feel like you actually  ate a satiating  entree?  Well, If  I told you there was a way to enjoy the deliciousness of cheese and Veggies  without being point heavy,  how happy would you be?  Ahhh, you’re in luck! 

If you’ve ever found yourself on the fence about Meatless Mondays, This cheesy dish will change you mind quickly especially with the amazing homemade bread crumbs!  and don’t worry, they’re EASY!

This dish is a hearty and filling plate  of veggies and bread  accompanied by the rich flavor of spices and melty cheese goodness!  And don’t be intimidated by the homemade breadcrumbs!  They are very easy to make and are so much better than store bought!  Plus YOU control the points and the flavor.  Personally, I’m known to throw in an extra dash or two of garlic!

Cheesy Veggie Casserole

Cheesy Dish with Homemade Breadcrumbs

  • Casserole Dish

Ingredients

  • 1.5 C Cauliflower Frozen
  • 1.5 C Brocolli Frozen
  • 1/2 oz Velveeta
  • 2 oz Fat Free Cream Cheese
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 C Breadcrumbs

Instructions

  • Cheesy Veggie Casserole
    Combine veggies and all other ingredients layered into a 9X9 casserole dish. Mix through.  Cheese will be solid and chunky. Cover with foil and bake at 350 for 30 minutes.     
    Barretts Breadcrumbs
    Line 5 pieces of Low point bread (I use Healthy Life Multi grain) on a baking sheet
    Spray with I cant believe its not butter 
    Combine ½ teaspoon of the following in a bowl:
    Garlic powder
    Onion powder
    Dry Basil
    Dry Oregano
    Salt and pepper

    Sprinkle over bread.  Let the bread sit out for 48 hours or you can bake in the oven at 300 for 15 minutes and then let it sit out for an hour.  The bread should be crispy and completely dried out. Break up the bread with your hand or in a food processor. KEEP THE SPICES!
