Soft Serve Ice Cream

I love Ice Cream!  Actually, I love all things dessert but cold and creamy is my favorite!  Something about the sweet creamy taste of that cold ice cream on your tongue just seems to bring joy!  In my constant quest to perfect a low point ice cream I’ve tried them all — protein ice cream, keto ice  cream, vegan versions, you name it!  And some of them were actually pretty good.  But also pretty expensive and hard to find. 

Nice Cream is a staple in my house. For those unfamiliar, nice cream is ice cream made with a food processor from frozen bananas along with a small handful of other ingredients and mix ins.  I love it!  But, that said, I know there are many people who just don’t care for the taste of bananas at all.  Or perhaps they have an allergy to the delicious fruit.  Are they left out in the cold without a spoon?  No way!

This ice cream actually tastes very similar to soft serve.  The texture is identical and the flavor is very close as well.  I served this to my 2 daughters last night, both non dieters and avid ice cream eaters, and both loved it and could taste the similarities to a DQ vanilla soft serve! The points are very low for this treat and you can add in any mix in that makes you happy. I used pineapple tidbits, frozen strawberries, little bits of broken chocolate Pizzelles — I even did an apple pie topping with a sprinkle of cinnamon! So much fun!  The ideas are only limited to your palette!

Soft Serve "Ice Cream"

This is a very point friendly, no banana soft serve Ice Cream!

Ingredients

  • 27 oz Greek Non Fat Yogurt
  • 2 oz Fat Free Cream Cheese
  • 13 grams Sugar Free White Chocolate Pudding Mix
  • 4 oz Cool Whip Lite
  • 3 tsp Pure vanilla Extract
  • 4 tbsp Swerve Confectioners Sugar

Instructions

  • Blend with a mixer.  Pour into glass Mason Jars and top with your favorite toppings or eat it just as it is!
    Yield 5-6 5 oz servings.  Can keep in a glass mason jar with lid for 7 days

    • YES! Did I write that wrong? I better go look. Yes SF White Chocolate pudding mix.

    • A good question but I think I would put it in the refrigerator. Too much yogurt to freeze. I hope you like it!

  3. Would Stevia work as well as Swerve?

    • I would say yes as long as its Confectioners and not granulated. Granulated could give you a little grit and that wouldnt be great with soft serve. If its all you have try it but I would recommend Confectioners.

  5. Have you tried it with fat free Cool whip to make it even less points?

      • That is correct for a 2 Tbsp serving. However, 4 oz of Lite Cool Whip is 12 points and 4 oz of Fat Free Cool Whip is only 7 points. 🙂

    Would this still work if you want Vanilla or Chocolate soft serve or would the cream cheese overpower the flavor?
