Bacon Egg Puff and Bubble

I love this Puff and Bubble recipe. The phyllo dough gives the crust just enough “puff” to create a delicious flaky base and the cheese “bubbles” up to the top for that ooey gooey creaminess! This dish is so satisfying I sometimes have it for dinner!

This recipe, like all of my WW recipes, are simple and easy to replicate however, Id like to offer a few tips on how to use the phyllo dough. Just few pointers that have helped me out as a home chef!
Phyllo sheets, which are paper thin sheets of pastry, thaw more evenly and are less likely to stick together if you let the unopened package thaw in the refrigerator overnight. You can keep unopened, thawed phyllo in the fridge for up to a month. Phyllo dries out very quickly when air is introduced so keep the phyllo covered when not working with it, and don’t leave it uncovered for more than a minute at a time. I just cover it with a damp paper towel. Works just fine!

Bacon Egg Puff and Bubble

Ingredients

  • 3 eggs
  • 1 C Egg Whites
  • 1/3 C Unsweetened Almond Milk
  • 2 oz Velveeta Cheese
  • 1 tbsp garlic Powder
  • 1 tbsp onion Powder
  • 1 tsp Black pepper
  • 1 C Fresh or frozen Brocolli I prefer Frozen
  • 6 pieces Bacon Boars Head is 2 pts for 2 pieces
  • 5 sheets Phyllo Dough

Instructions

  • Lay 5 sheets of thawed phyllo dough in a 9X9 casserole dish sprayed with olive oil. Spray those as well and all a little salt.Whisk eggs with seasonings together along with almond milk. Pour over the top. Next pour over the egg whites. Add bacon broken into small pieces and then the chopped broccoli. Lastly add cheese.Bake at 400 covered for about 30 minutes. Remove foil and bake another 8-10 minutes allowing the top to get golden brown.
