Strawberry Skinny Bomb

Skinny bombs are the lighter version of a Fat Bomb!

So what exactly is a Fat Bomb?

A fat bomb is similar to an energy ball or Protein ball of sorts however,   instead of being  based around carbs and sugar utilizing ingredients  ingredients like dates, fig, oats, granola, etc … fat bombs are high in fat!  Hence the name fat Bombs!

Now on a Ketogenic diet or even on some low carb diets,high-fat, low carb fat bombs are very popular! Fats such as such as coconut oil, peanut butter and heavy cream are readily used and encouraged!  But, many of us are on a WW lifestyle (Weight Watchers) and although these  little poppable treats sound wonderful, they usually come out to  over 12 points each on WW!  

OK, so how do we fix that and make them WW friendly! 

#1 — Let’s pick a base fat that’s more weight watchers friendly

So lets start with out flavor profile and our fat level.  We KNOW we need to reduce that down to make these delicious treats WW friendly. SO, what kind  of flavor experience do we  want? Savory, creamy, cold, crunch, salty?  Lets go with Creamy and cold today!  

We could use

*Reduced fat Cream Cheese

*Fat Free Cream Cheese

*Yogurt 

#2 — Let’s choose our flavor!

So are we looking for vanilla, strawberry, chocolate, peanut butter?  What sounds good?  Today we will choose strawberry!  

We could use

*Strawberry topping

*Strawberry Extract

*Strawberry jelly or jam

*Strawberry Jello mix

#3 — Texture  

How do you feel about texture?  Do you want this to be creamy like ice cream or are you looking for something a little more like a Rocky Road?  Do you love crunch with your creamy?  Your choice?  

We could use

*Walnuts

*Pecans

*Cacao Nibs

*Shredded Coconut

*Sugar Free Chocolate Chips

OR we could go with a “crunchy” fruit

*Apples bites

*Raisins

*Pineapple

*Pomegranite

Here are the ingredients we will need for our recipe.  Look how truly simple this is! Just mix, scoop and freeze!

Once we have figured those 2 things out, the hard part is over!  We are basically choosing our fat level to meet our dietary preference.  So for someone like me who is on the WW Blue plan and living a low carb lifestyle at the same time, Im going to go with a lower fat cheese and some sugar free ingredients I love! I dont need this to be a full on FAT BOMB, I’m looking for the SKINNY BOMB version! 

I served this tray of Skinny Bombs to my family — many of you know I do a lot of that in my test kitchen, and EVERYONE loved them!

 

Skinny Bomb PRO TIP

Put these in the  freezer for 24 hrs.  It virtually eliminates the substitute sweetener after taste that some are sensitive too!  Now if you are VERY sensitive to it and my freezer trick doesn’t work for you (but I bet it does) you can always pull the Swerve back to 2 Tbsp.  You can even eliminate it altogether but in that case just know they will of course be much less sweet.   Still good — but less of a sweet treat. 

When do you eat them?

My favorite time to eat these is around the 3pm sugar drop hour and I also love them as a dessert.  Coming in at only 2 WW smartpoints on all WW plans, you can feel free to have them at 3pm and after dinner!

Youve heard of the Keto version of the fat Bomb? Well, this is the WW low carb version I call a skinny bomb and its a BURST of strawberry flavor!

Equipment

Ingredients

  • 8 oz Reduced fat cream Cheese
  • 1/4 c Swerve Confectioners Sugar
  • 1 C Frozen Unsweetened Strawberries
  • ½ tsp vanilla extract
  • ½ tsp strawberry extract
  • 1-2 drops red food coloring Optional
  • 2 tbsp Sugar Free Smuckers strawberry topping

Instructions

  • Mix all ingredients is a mixer and then scoop with an ice cream scoop onto parchment paper on a baking sheet. If your skinny bomb batter is too runny to scoop, place in freezer for 1-2 hours and then scoop.
    Let freeze for 24 hrs for best and tastiest results!

    I followed your recipe with one change since I have not yet found SF Strawberry topping. As noted in your list of possible options, Smuckers SF jam worked just fine. Using my small cookie scoop (about a tablespoon or 1 oz.), I wound up with 20 skinny bombs which matches your recipe perfectly. These are a deliciously creamy, flavorful treat.

    I am enjoying cooking my way through your recipes. I also made your garlic steak bites today and served with roasted asparagus and mushrooms. I do not feel deprived and have had an excellent first week weight loss!
