Tex Mex Ground Beef

This weekend is Super Bowl! Lots of fun and friends and cheering but also … lots of food! Lots of opportunities to consume 100 points per hour with no problem!  So how do we tackle this?  I have your answer!

If you’re anything like  me, you want to participate in all the fun but you don’t want to be overly tempted!  I get more anxiety over the food than the game itself.  SO the answer is to be prepared!  Just like any great Quarterback, you need to call the shots on the food!  We are going to cook ONCE and eat several times!

You can create a whole Mexican Fiesta of delicious, low point snackables and no one will ever think they are WW friendly!  Grab some Ole Wellness wraps and layer them between the Tex Mex Beef and some cheese and bake.  You haev yourself and enchilada casserole!  Pick up some Scoopable Tortilla Chips and some Mini Street Tacos and create mini tacos and tostadas.  Make a beef burito!   Throw some non fat greek yogurt in a bowl — this is one we are sometimes best NOT to reveal its identity — and some low fat cheeses and salsa and you have a party! I like to create a station with chopped cilantro, lettuce, red onions and pico de gallo too!  So many options!

You can even put a teaspoon of taco meat one a round tortilla chip and make little taco nachos! Be creative and most of all, enjoy yourself!

Tex Mex Ground Beef

Ground Beef flavored with Mild Mexican Seasonings. Not too spicy!

Ingredients

  • 2 lbs Lean Ground Beef
  • 1 large onion chopped
  • 1 packets Taco Seasoning
  • 1/2 C Ortega Mild Taco Sauce
  • 1 4.5 oz green chiles in a can
  • 1 tsp Ground cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 1/2 C Water

Instructions

  • Brown onion and Hamburger. Add in all remaining ingredients and let simmer for 20-30 minutes on low.
