Cauliflower Pizza Crust

Everybody loves pizza!  Its like its own meal in every little bite!  Whether you are on Weight Watchers, like me, or on keto or low carb, this mouthwatering pizza pie works! Customize the points, carbs and flavor by changing out the topics to your liking!

Some tips when making the crust! 

#1 BE sure to squeeze out the liquid after boiling the Cauliflower and the Broccoli!  This is VERY IMPORTANT in obtaining a crispy crust!

#2  Do not overboil your veggies!  You want them slightly softened.  Just enough to take the crunch edge off. 

#3  Remember you will be baking this twice so that will help give it that nice crispy pizza crust bite! 

#4  Your crust should be layered on to the pizza pan THINK.  If its too think it will not be able to get crispy like a pizza!

Feel free to get super creative with the toppings!  I did a basic Pepperoni Pizza but feel free to add things like pineapple, ham, bacon, more veggies, chicken with a little BBQ sauce!

IM experimenting with a trying to create a dessert pizza for those of us on a WW lifestyle but I dont have that nailed down yet!  But dont worry, it will be forthcoming! It needs a bit more work to get that video ready!

Veggie Pizza Crust

Ingredients

  • 1 C Frozen Broccoli cooked
  • 1 C Cauliflower Cooked
  • 2 eggs
  • 1/2 C Parmesan
  • 1-2 tbsp Garlic powder
  • 1 tsp salt
  • 1 tsp Black pepper
  • 1 tbsp minced garlic
  • 2 tbsp pizza seasoning

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Boil the Broccoli and Cauliflower to slightly softened (about 5-6 minutes) and strain well. Break the Broccoli and Cauliflower into chunks. Next, place veggies in a cheese cloth and squeeze out all the excess water. You may have to do this a few times until there is no more water and the veggies are dry. THIS IS WHAT WILL MAKE A THIN CRISPY CRUST! DO NOT SKIP THIS STEP!
    Next, Pulse in a food processor until fine with all remaining ingredients except pizza sauce and extra toppings. Drain out water one more time. Let cool.
    Spread pizza crust on your pizza pan thin and bake for about 20-25 minutes. Let cool and add toppings. Then bake again about 15 more minutes.
