Cheesy Broccoli Soup

Does it taste like Panera Broccoli Cheddar Soup?

Im going to go out on a limb and say its pretty darn close but MUCH lower in WW smart points PLUS you control the ingredients!  The original version uses cream, flour, butter and lot and lots of cheese.  In this recipe, we are able to copy that flavor without all the fat, calories and points!  This recipe is even a good one for my low carbies!

Do I really need a food processor?

You do.  Now Im not saying you cant eat this in its whole form, with big chunks of veggies, but in all honestly, its just not as good.  I believe  a  good food processor is a game changer in your kitchen.  Ive found it to be the one thing i grab for 2-3 times weekly in my WW (Weight Watchers) test kitchen! Here is the one I have at home. I would not suggest getting one that is too inexpensive because quite frankly, they break.  I have spent $50-$70 on 3 — yes 3!  I wihs I would have just spent a bit more in the beginning! The one I have now has last 10 more years .. and counting!  SO just get the best you can for your buck because you will use it often!

Wait, does that say RADISHES!

Yes ma’am! 

In Eastern culture, radishes are considered  a digestive aid. 

They are purported to help eliminate  food retention, (in other words bloat!)  and the root itself is used to treat digestive conditions like abdominal pain and acid reflux. They are also considered a wonderful palette cleanser in many cultures.  

But, for us, they are going to create a FLAVORLESS velvet like texture without using cream and flour.  I promise you will NOT taste the radish at all. The flavor mellows down into a potato flavor and texture when boiled! 

What kind of radish should I get?

Good question!  There are many types but we are going to work with the table variety.  Those are the ones you see in the stores often with the red color on the outside.

Radishes: Nutritional Superfood

The table radish is a little know, very healthy addiiton to your diet plan — especially on a low carb, keto or WW plan!   Radishes are high in Vitamin C — one cup yields almost 10% of your daily fiber intake! . That same serving size contains about 19 calories!

WHO KNEW?! 

The leaves  are an even better source of nutrients! They containing more vitamins and protein than the radishes themselves and can be used in soups, sauces, salads or smoothies! 

Cheesy Broccoli Soup

This cheesy soup is velvety smooth and tastes much like the Panera Bread version!

Ingredients

  • 2 C Frozen Broccoli
  • 1 C Riced Cauliflower
  • 5 Peeled Radishes
  • 2 tbsp Minced Garlic
  • 2 C Vegetable broth
  • 1 Chopped onion
  • 2 tbsp Butter substitute
  • 2 ounces Greek Cream cheese
  • 2 Ounces Velveeta cheese
  • 1 tsp salt and pepper
  • 1/2 Grated carrot

Instructions

  • In a pan, saute all the veggies (except the carrot) in a pot to slightly soften with garlic and warm up the garlic and onions. Add in the veggie broth and let cook until all veggies are soft -- especially the radishes. Grate in about 1/2 carrot. Add in butter and cheese and melt. Once slightly cool, pour into a food processor and blend until smooth.
    Add salt and pepper and top with a sprinkle of parm!

  1. What does the rahidhes add to the recipe? I’ve NEVER eaten a radishes…

    • In the blog I wrote I mention everything the radishes bring! They work perfectly in this recipe!

  2. I made this soup today. I only got 5 1cup servings not 12 as the recipe states.
    It is delicious but very thick. Did you add more vegetable broth or water than recipe state. Mine came out to 3 pt/cup which is not bad.

    • Hmmmm weird. I made this soup again this past Monday and I got 11 cups this time. I didnt add in any additional liquid but you could add some more vegetable broth to get more out. Im glad you liked the taste!
