Creamy Peanut Butter Bars

Can dessert be healthy! The answer is YES!

Here’s how and why! 

Ok, let’s start with Peanut butter.  A very healthy fat, especially if you use the kind that is low in added sugar. Peanut butter  is a lot like bacon.  When you love it, you love it! And I mean REALLY love it!  That’s me by the way! 

So, let the peanut butter lover inside you lose the guilt!  Yes, if you are on WW (Weight Watchers) you may have to do a little soul searching because we are so accustomed to using the powdered version, like PB2 or PB Fit among others. 

But we are going for dessert!  a creamy, satisying indulgent dessert so you might have to leave a little WW point room for this!

We can make  chewy peanut butter cookies to light and airy peanut butter mousse.  We can make creamy Peanut Butters bars (like these!)  or  Reeses Peanut Butter cup copycats. There are Peanut Butter options  options for everyone! Sugar free, low carb, low fat, high protein, high fiber, gluten free, dairy free, vegan, powdered — whatever diet you are on, this can and will work!

What can I add to the base recipe for more options?

Once you have the basics of this recipe down, add Lilys Unsweetened chocolate chips 

or Choc zero chips which are delightful in chocolate taste but keto or low carb friendly along with being a WW favorite! 

You can add oatmeal and raisins if you prefer or even a dollop of orange marmalade!  Sometimes I melt a little chocolate over a double boiler and dip them in balls into some dark and decadent bitter chocolate.  Truly a sophisticated Peanut Butter bite!

Ingredients

  • 475 grams Creamy Peanut Butter
  • 1 tsp Vanilla
  • ½ C Self rising Flour
  • 2-3 tbsp Truvia Brown Sugar Packed firmly
  • 2 eggs

Instructions

  • Mix the wet ingredients together and then add in the dry. You dont need a mixer, just a spoon. Spread over a greased baking sheet that is 9X13 and bake at 350 for 15-20 minutes. Let cool and refrigerate for 30 minutes.
