Thick Crust Pizza in a Jar

Have you ever heard of the Pizza in a Mug?  There are many versions out there featuring a handful of ingredients, some of them a little challenging to find. Being that many of us are on WW (Weight Watchers) we are probably familiar with the 2 ingredient dough that has become so popular!  I love it too BUT it is a bit cumbersome to work with being that it is very sticky and you have to get out a rolling pin and flour and work with it to get it to the right dough like texture.

Trust me I get it!  The other issue with the 2 ingredient Dough by WW is that many of us are taking more points then we think.  Every time you throw down some flour to help alleviate the stickiness, you are ADDING POINTS!    

Enter the bigger, bolder Pizza in a Mason Jar!

One of the many reason I love making things in a Mason Jar is that not only do you control the ingredients much better in terms of portions, but also there is little if any waste.  Plus you can make more than one if you want because you have Mason Jars with a lid  

Perfect for a make ahead! 

Now this Pizza in a Jar is a Thick crust Cheese pizza.  You can certainly add little pepperonis if you like, maybe a little bacon, pineapple or sausage.  Make this exactly the same as you would order your pizza to go!  But this will be so much better!  

If you prefer a lower carb pizza you can substitute the Self rising flour with Almond flour if you like. 

Personally, I prefer the self rising because I find the almond flour to be just a bit gritty.   You can also easily adjust the point by using a little less flour (recipe at bottom) and you will have a thinner crust pizza.  None of the other ingredients need adjusting whatsoever.

Equipment

  • Wide mouth Mason Jar https://www.amazon.com/shop/barrettpastor

Ingredients

  • 4-6 Tbsp Self Rising Flour Depending on how thick you want the crust to be.
  • 2 ounces Pizza sauce
  • 1 tsp Olive Oil
  • 1-2 tbsp Non fat greek yogurt
  • 2 tbsp unsweetened almond milk
  • 1 pinch salt and pepper
  • ½ tsp Dry basil
  • ½ tsp garlic powder
  • 1-2 tbsp Fresh Parmesan Or any cheese you like

Instructions

  • Add all dry ingredients in the mason jar and stir to combine. Then add in the wet ingredients except the pizza sauce and cheese. Mix until the consistency of dough and spread to cover the bottom of the jar. Add pizza sauce on top with some parmesan and a little more basil.
    Cook in the microwave for 60-90 seconds until dough is cooked through but soft.

    This is so much better than I imagined. It really helps my craving for pizza. I added 4 thin slices of Italian chicken sausage to mine so yummy. I didn’t add more points for the sausage because they were so thin. I really don’t think it mattered>
