Easy Weight Watchers recipe coming in at only 3 points per hearty serving! This was adapted from a recipe I found on the recipe blog #mybizzykitchen.  I changed the ingredients to be a little more points friendly but maintaining all the taste!

Watch step by step as I make this simple and tasty Lasagna Soup.  I only used 2 sheets of lasagna making this incredibly cost effective.  Of course you can change out any psta you may like.  Ive made this with a Mostaciolli noodle and even a penne noodle as well.

Lasagna Soup

Equipment

  • 1 Stock pot

Ingredients

  • 1 lb 96% lean ground beef
  • 2 sheets Uncooked lasagna noodles
  • 1 chopped green pepper
  • 2 Carrots (1 chopped and 1 to grate into soup)
  • 1 tbsp minced garlic
  • 1 chopped onion
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 1 tbsp Olive oil
  • 1 tbsp dry basil
  • 1 tsp dry oregano
  • 1 tbsp granulated garlic

Instructions

  • Brown hamburger, garlic, onion and green pepper in a stock pot with a little olive oil. Add in all other ingredients to simmer about 30 minutes. Break up 2 sheets of lasagna noodles, toss in and turn the heat off. Let rest for about 15 minutes and you are ready to serve!

 This will make 5 servings at 3 points each.

    Love this recipe so much Barrett. It’s tastes even better the second day!! Thank you so much for the pasta because you were so right about shutting everything down and let the sheets swell. So good!!

    I thought this recipe would be soupier. Mine was really thick so I added one and a half cups of chicken broth. I added some salt, pepper and Italian seasoning. I also decided that two sheets of lasagna noodles was not enough so I increased lasagne noodles to eight and my recipe made 6 servings for 5 points a serving. That is reasonable amount of points. The flavor was really good. Thanks for the recipe.
