THE best PB chocolate chip Oatmeal Cookies EVER!

Yes that’s right!  Evvvvver! They are creamy and crunchy and have NO RUBBER bite which can sometimes happen with a banana based cookie.  The secret to avoiding that with a banana flour and egg replacement is adding in baking soda and baking powder.  It really helps give these Weight Watchers friendly cookies and cravable chewy texture. 

These delicious cookies are also very low in calories so have a few!  I like them as a breakfast on the go with a piping hot coffee.  I never feel guilt because they are made from simple, clean ingredients.  Its pretty much like having a little oatmeal and banana on the run.

Now if you want to use powdered PB 2 or a powdered version of peanut butter you certainly could as long as you make sure the mixture is thick and creamy like the original stuff.  But honestly, at ONE Weight Watcher point per cookie — how much better can it get? 

You will not need a mixer for this recipe.  Just a bowl and a fork.  I whip these up often when the grandkids come over. The 4 year old, Laney, loves scooping them out with the ice cream scooper. I feel good about serving them to them because of the healthy ingredients.

You can add other things into this recipe as well!  Try things like:

  • Cranberries
  • Raisins
  • Your favorite nuts
  • A dash of cinnamon
  • A little  orange zest with a dried fruit
  • 1 tbsp Cacao powder
  • Cacao Nibs 

PB Oatmeal chocolate chip cookies

Ingredients

  • 3 smashed overly ripe bananas
  • 2 tbsp Creamy Peanut Butter
  • 1 1/4 C Old fashioned Oats
  • 60 Lilys Chocolate chips
  • ½ tsp cake batter extract
  • ½ tsp vanilla extract
  • ½ tbsp baking soda AND baking powder

Instructions

  • Mash the bananas with a fork and add in all other ingredients. Mix together with a fork until combined. No mixed needed or suggested. EASY!
    Bake at 350 for 10-12 minutes and let cool completely before removing from pan.
