Raspberry Cheesecake

Have you ever tried the Weight Watchers Zero point cheesecake?  Me too.  Can I be honest?  I was a little underwhelmed. For me, it was a bit dry, tasteless and not sweet enough.  Lemon made it far worse.  It needed improvement for sure and this recipe I created is, in my humble opinion 🙂 FAR better than the original WW cheesecake version! 

This one is bursting with flavor and the perfect cheesecake texture.  I recommend that you FREEZE it overnight and then let it thaw for about 30 minutes prior to serving.  It allows the cheesecake to set up and then rest to perfection.

I would suggest using a blender to mix but if you don’t have one, you can mix this by hand. Just be sure to get all the ingredients combined.  Ive been asked by those on the WW Green plan if you can sub out the whole eggs for egg whites.  The answer is yes you can BUT, it wont taste as good.  The points are so low that I would work it into your day as opposed to pulling out the fat in the eggs and changing the taste and texture.  To me, its not work it. 

Ive also been asked if you can make this with with regular jello — not the sugar free type.  OF course! I use sugar free to bring the points down and limit the sugar but you certainly dont have to!  All of my recipes can easily be “non diet” if you prefer the real thing.  Same goes for fat by the way.  You can use full fat cream cheese if you prefer that as well. Adding in the fat and leaving out the sugar would actually make this a Keto friendly recipe and its already low carb!

What if I dont like Raspberry?

Not a problem!  Add in any flavors you like!

Blueberries are a huge hit and I even like to mix a few in for sweetness!

Sky’s the limit when you have the base recipe down. You can even make this a plain New York Style cheesecake by adding Sugar free Cheesecake jello mix with just a dollop of cool whip over the top.

Sugar Free Raspberry Cheesecake

This is the best cheesecake recipe around for Low Carb and WW!

Ingredients

  • 2.5 C Non Fat Greek Yogurt I like Chobani or Fage
  • 2 Ounces Low or No fat Cream cheese
  • 1 small Package of Sugar Free raspberry jello mix
  • 3 tbsp Swerve Confectioners Sweetener
  • 3 Eggs
  • 1 tsp strawberry extract
  • 1 tsp Vanilla extract
  • 4 droplets Red food coloring if desired

Instructions

  • Combine all ingredients and mix well. Use a round cake pan or better yet, a cheesecake pan if you have one. Preheat oven to 350 degrees. Bake uncovered for 35 minutes. Let rest for 15 minutes and then freeze for at least 4 hours and 24 hrs is preferred.
