Yeah, its true!  Potassium is a nutrient that most people don’t get enough of and it can cause some uncomfortable physical symptoms like leg cramps, charlie horses and some other bothersome issues.   

The little green alligator skinned gem is a super food we should take a close look at including in our diet of every week! 

For health, many studies show that having a high potassium intake is linked to a reduced blood pressure, which is a major risk factor for heart attacks, strokes and kidney failure.

Other than tasting awesome, they also make a creamy salad dressing when mixed on with other veggies.  The soft texture and subtle flavor melds well with just about any vegetables in a salad.   

Additionally, there is much evidence that avocados are a  wonderful partner in weight loss and should be considered a weight loss super food! 

People eating avocado with a meal have stated in studies that they  felt 23-25% more satisfied and had a 28-35% lesser desire to eat over the next 5 hours!  In other words they keep you satiated for a longer time due to the higher levels of GOOD fats! 

Avocados are also high in fiber and very low in carbs, two huge factors in weight loss!  WW factors both into their weight loss formulas!   

Sometime I add this to a Chicken Fiesta bowl as the base of the bowl.  Super flavorful and delicious with no dressing needed!

  • A big Bowl

Ingredients

  • 1 Avocado
  • ½ C Chopped Cilantro
  • 1 Sliced red onion
  • 1 large Peeled and chopped English Cucumber
  • 2 Limes Squeezed Grate some zest
  • ½ tsp Olive Oil
  • 1 tsp salt and pepper
  • ½ tsp Garlic powder

Instructions

  • Toss all ingredients in a large bowl and grate some lime zest over the top! Serve chilled!
    Decorative plate for salad

  1. I am excited to try this. But not a fan of cucumbers, what can I replace them with. Also I don’t know anything about English cucumbers? Thank you Barrett Pastor for all your wonderful reciepes! 💕

    • English Cucumbers are basically seedless cucumbers. Much easier to digest!
