Key Lime Cheesecake

Simply the BEST WW cheesecake recipe ever!

Creamy. Sweet. Cold. Delicious! This is honestly in the top 3 of recipes I’ve ever created! It is dangerously good!  But coming in at a mere 3 WW (Weight Watchers) points, there cant be THAT much danger!   This amazing recipe serves 14-18 people and it will fill two 6X6 glass plans.  Click this blue link for the ones I used.   They come with a lid. Makes it easy for storage and cooling!  But if you don’t have these type of glass dishes, just use something similar in size.  Just don’t make it to large because you dont want it to be too thin.  The cheesecake wills till set up but its better if you have about an inch or so of thickness to get that real cheesecake texture!  

My family went crazy over this recipe and no one thought it was a Weight Watchers skinny down recipe creation! I love taking typical comfort food and turning it into something the who family can enjoy!

This recipe is very creamy just like a cheesecake.  It does not need to go in the freezer BUT if you wanted to make this ahead for a group you certainly can freeze it with a lid ahead of time and then thaw it out the say to serving. Fathers day is coming up this weekend and Key lime Cheesecake is my dads favorite.  He is a diabetic and I am sure he will not miss the taste or lime burst in this cheesecake. 

I love having the option of adding the super easy crust.  If you are open to adding in a few more calories, the crust is well worth it.  We only use 2 sheets of graham crackers per cheesecake so the WW points are very small.  This recipe is also low carb and keto friendly making it a flavor win for all diet lifestyles!

Key Lime Cheesecake

Equipment

Ingredients

  • 16 ounces Low fat cream cheese
  • 3 ounce Box of Lime Sugar Free jello mix
  • 1 C Non fat greek Yogurt
  • 1/4 C Swerve Confectioners Sugar
  • 1-2 tbsp freshly squeezed Lime juice
  • 1 tsp Vanilla Extract

Instructions

  • This recipe will make 2 6X6 cheesecakes. If you ant want one with a graham cracker bottom, just add 2 grahams broken up with 1/2 Tbsp of melted butter and mix well. Bake at 300 for 10 minutes. Let cool. I did one with a crust and one without.
    Filling:
    First, in a pot, add the box of gelatin with 1 cup hot water. Bring to a boil. Add one half cup ice cold water or ice cubes. Stir until its disolved. Pour into a bowl. Add in all other ingredients and blend very well with a mixer until all lumps are gone and the mixture is creamy.
    Pour into both pans and let chill for at least 4 hours. These will serve 18 people OR you can cut larger slices!

      Its made by Weber. The seasoning is actually called Cowboy seasoning. You shoudl be able to get it in any grocery store.

  2. I was just looking at the video for your key lime cheesecake recipe. The video does not match the recipe. Your video did not look like 16 oz of reduced fat cream cheese and you mentioned that you add 1 cup of cold water to the hot water jello mix. The recipe calls for 1/2 cup cold water. So I am trying to verify the Measurements of the reduced fat cream cheese and also the ice cold water before I make this recipe. Thanks. Enjoy your videos.

    • The recipe is 100% correct. I dont necessarily show every single in the video which is why I dont give measurements in it and I refer you to the written recipe. In the video I believe I said one cup boiling or very hot water to a boil and then add in one half cup cold water. That is also correct Sorry for the confusion.

      • Thanks for your reply, Barrett. I did go back and watch your video again, and did verify that you said add 1 cup of cold water. I will take your suggestion and use 1/2 cup ice cold water.
